My wishes for every mama this Mother’s Day:
*May you get to use the bathroom at least once this weekend without an audience or child sitting on your lap.
*May you eat at least one meal or part of it (let’s be realistic) before it’s ice cold and may it be indigestion free.
*May you remember to take care of yourself (still working on this) because, as my own mother says, “If Mama ain’t happy (and healthy), ain’t NO ONE gonna be happy.” LOL. So true!
*May you have one nap or better, a full night’s sleep (remember a full night sleep for a parent in baby land is a 5 hour stretch. Don’t get too excited-lol).
*May you resist doing any household chores this Sunday and finally attempt to rest while the baby is sleeping (still cannot do this).
*Most of all, may you be surrounded by all of your babies big and small. And if they can’t be with you tomorrow, may they be happy and healthy because after all, that’s all any mama really wants for Mother’s Day. That and maybe a shower. : )
Who doesn’t love pound cake? And pound cake with chocolate chips? Heaven! Serve this up to mama along with a steaming cup of coffee or tea. Sit down together and have a chat.
Chocolate Chip Pound cake
1 cup egg whites, beaten until stiff
2 cups granulated sugar
1/2 lb butter, softened
2 teaspoons vanilla extract
4 cups all-purpose flour plus 1 teaspoon for dusting pan
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup chocolate chips, tossed with 1 teaspoon of flour so they don’t sink to bottom of cake
1.Preheat oven to 350 degrees. Butter and flour a 10 cup bundt pan.
2. Whisk together flour, baking powder and salt in a large bowl and set aside.
3. In the bowl of a standing mixer, beat egg whites until soft peaks form. Wipe out the bowl and set the beaten whites aside.
4. Fit your electric mixer with a paddle attachment and beat butter and sugar until light and fluffy, about 5 minutes. Add in vanilla. Put mixer on low and gradually add in flour alternating with the milk. Stop the mixer and gently fold in the beaten egg whites by hand using a rubber spatula, then the chocolate chips. Pour into prepared pan and bake for 1 hour. Cool in pan. Loosen cake with a sharp knife before removing from pan. Enjoy!
