There is never enough time in the morning and breakfast seems to be the meal people skip the most. It’s easy to convince yourself that those sugary breakfast bars are a good portable breakfast when you are running out the door. But believe it or not, it’s super easy to make your own on-the-go breakfast. When there just isn’t enough time to sit down to a bowl of oatmeal, these Apple Cinnamon Oatmeal Squares fit the bill. They can be made the night before in just a few minutes. This is my kind of breakfast, a breakfast that is waiting for you when you get up.
Makes 6 large squares or 12 smaller squares
2 large eggs, beaten
1/2 c milk ( I used skim but you can use whatever you have around including soy or almond)
1 apple, shredded
2 c oatmeal (I prefer old fashioned oats but this also works with quick oats )
1/4 c brown sugar (you can omit if you prefer)
1 tsp cinnamon
1/4 tsp salt
1. Preheat oven to 350 degrees. Spray an 8×8-inch non-stick pan with cooking spray.
2.In a medium bowl, add all of the ingredients and stir until just combined. Pour into pan and spread evenly so that the entire pan is coated. Cook for 15-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes. Cut into 6 large squares or 12 smaller squares. May be stored on the counter for 1-2 days, in an airtight container.
TIP: Swap the shredded apple for 1/2 c of raisins or dare I say it chocolate chips.
